Allergy free Viscount Biscuits
I love mint with chocolate and these are so nice I have to be carried away from the biscuit tin.
1 batch of the Shamrock cookie dough http://cathalscookbookallergyfree.com/biscuits-and-cookies/shamrock-cookies/ you can leave out the coconut if you like.
50g dairy free margarine
150g icing sugar
1 or 2 drops food colouring
1 or 2 drops of mint
100g dairy and gluten free chocolate
2tsp dairy free margarine
2tsp honey/golden syrup/maple syrup/agave syrup
1tsp vanilla extract (optional)
Follow the method for the Shamrock cookies. What ever shape you like leave them to cool on a wire rack.
To make the icing(filling), place all the ingredients into a bowl and mix with an electric hand mixer (It will take a bit of time but don’t be tempted to add any liquid, it will come into an icing). Put it into an icing bag and lay in the fridge.
To make the chocolate coating, place all the ingredients into a heatproof bowl and lay over simmering water till it is all melted and mixed well. Take it off the heat and let it come to room temp.
To assemble pipe the icing onto to cold biscuits, then cover them wit the chocolate mix and lay them in the fridge to harden.
