Pretty little things

These are so easy my 4 year can do them. Sarah-Jane and Cathal had great fun making and decorating these Pretty Pops. These would be great for birthday parties you could let all the kids decorate one each. I used cup measurements in this recipe because the batteries went in my kitchen scales. Cups are so much handier than scales.

2 cups plain gluten and wheat free flour
3/4 cup dairy free margarine
1tsp vanilla extract
1/2 cup icing sugar
12 lolly pop sticks(I got them in Home Store And More)
1 cup of icing sugar
2 or 3tbsp water maybe a bit more
Food colouring
lots of sprinkles


Sieve the flour and sugar into a bowl add the margarine and vanilla and mix with a electric hand mixer.
Then bring the dough together with your hands. Lay it in the fridge for about 30 minutes.
Pre-heat the oven to 170 degrees fan.
Take the dough out of the fridge and roll between to sheets of clingflim. Cut out whatever shapes you like, Then lay the biscuits on a tray and press the stick into the biscuits cover the stick with a little more dough (the piece of the stick that’s in the biscuit I mean). Bake in the oven for 12 to 15 minutes. When baked lay them on a wire to cool.
Meanwhile make the icing mix the icing sugar and water, then split the icing into as many colours you are going to use and add the food colouring (I use the gel ones)
Cover the pops with the icing and let the Artists do their work !!!!
