White chocolate and cranberry cookie

These are so simple and tasty, the cranberry works well against the very sweet white chocolate. As always these are wheat, gluten, dairy, egg, nut free and suitable for vegans….


100g gluten free oat flour( I just blitz my own gluten free oats)
50g gluten free oats
50g wheat and gluten free plain flour
1 level tsp xanthan gum
80g caster sugar
pinch of salt
125g dairy free margarine
75g dairy free white chocolate chips(you can also use white chocolate buttons bang them with a rolling pin)
50g cranberries chopped


Pre-heat the oven to 180 degrees fan.
Place all the ingredients into a large mixing bowl and mix with an electric hand mixer till it comes together. Then press the mixture with your hands to form a ball. Put the dough into the fridge for at least 30 minutes or over night. Take the dough out and place it between 2 sheets of clingflim and roll. Cut out your desired cookie shapes and put then on a tray lined with baking liner. Bake in the oven for 12 to 15 minutes till slightly golden. This mix will make about 15 good size cookies.
