Asian Chicken with Avocado Noodles
This dish is so fresh and tasty. I love a dish when I can taste every ingredient, and this dish certainly delivers on that. The avocado works really well with the noodles, and gives another dimension to the dish.
1 onion chopped
3 celery sticks chopped
2 carrots peeled and cut into matchsticks
2cm piece of ginger grated
2 cloves garlic grated
Zest of 1 lime grated
2tsp lime juice
75g baby mushrooms cut in half
500g chicken strips
150ml chicken stock
2tsp soy sauce
1tsp brown sugar
squeeze of lime juice
1 courgette cut in half lengthways and sliced
For the noodles
200g vermicelli noodles
1 avocado peeled and stone removed
1tsp fresh thyme chopped
1tsp fresh parsley chopped
1tsp fresh chives chopped
2tsp lemon juice
1 small clove of garlic grated
salt and pepper
1/. Place a pan on medium heat and add 3tsp coconut oil. Then add the onions and celery cook for 3 minutes.
2/. Add the carrots, ginger, garlic, lime zest and juice mix and cook for another 3 minutes. Then put in the mushrooms and chicken cook for a few minutes.
3/. Meanwhile mix the chicken stock, soy sauce, sugar and lime juice together, and pour it in to the pan and give it a toss , cook for 10 minutes. then add the courgette and cook for about 5 minutes.
4/. Put on the noodles they take about 8 to 10 minutes.
5/. Put the avocado, herbs, lemon juice, garlic, salt and pepper into a bowl and mix with a hand blender. When the noodles are done toss them in the avocado mix .
Serve with a tossed salad and lime wedge Yummy.
