Allergy free chocolate, date and coconut cake

lovely and moist Allergy free cake

The dates and chocolate go really well together, it is a lovely moist cake!!

Chocolate, Date and Coconut Cake

150g dairy free margarine
125g caster sugar
2 pears pureed
100g dates stoned and chopped
30g dessicated coconut
50g dairy free chocolate chips
Grated zest of 1 lemon
250g wheat and gluten free plain flour
2tsp baking powder
1tsp xanthan gum

Pre-heat the oven to 170 degrees(Fan)
Cream the margarine and sugar together then, add the pears and mix well.
Add the dates, coconut, chocolate chips and zest of lemon and mix.
Sieve the flour, baking powder, xanthan gum in and mix it all together, pour the mixture into a well greased loaf tin and place in the oven for 40 minutes. When the cake has browned(about 25 minutes) cover the top of the cake with baking paper. When the cake is bakes put it on a wire rack to cool.
This can be frozen. Enjoy xx
