6 Ingredient Christmas Cake

Lovely and light cake!!
This is a simple and healthier Christmas Cake!! This cake will last 4 weeks if you make sure to wrap it up properly wrap it first in parchment and then in tinfoil and store in a cool place.


400g mixed dried fruit
100g chopped and stoned dates
250ml pure apple juice
1 apple pureed or pear
175g gluten and wheat free self raising flour or plain with 2tsp baking powder
1tsp mixed spices


Place the mixed fruit and dates in a bowl, pour in the apple juice(you could add a little tipple in here now, to make sure it is gluten free dark rum or sherry is best.) and cover and leave it overnight to soak.
Pre-heat the oven to 140 degrees fan.
Add the pureed apple to the soaked fruit and mix, then sieve the flour and spices in and mix well with a wooden spoon. Pour the cake mixture into a lined 6 inch round tin (make sure to line the outside of the tin with brown paper folded into 4). Bake in the oven for 1hr to 1hr 20mins. Its baked when the skewer comes out clean.
