Allergy Free Star Jams

These tasty biscuits are very festive looking! They are gluten free, wheat free, dairy free, egg free, and nut free.


175g gluten and wheat free plain flour

1 tsp xanthan gum

Zest of 1 lemon

100g dairy free soft butter

50g caster sugar

8 tsps jam, strawberry or raspberry

Preparation time 20 minutes

Cooking time: 10-12 minutes

Makes about 15 biscuits


Preheat the oven to 180 degrees (fan).

Sieve the flour and xanthan gum into a bowl. Add the zest of the lemon and mix. Rub the butter into the flour, and add the sugar.

Bring the dough together with your hands (do not add liquid, even though it seems very dry, it will come together!)

Roll out the dough between 2 lengths of clingfilm, to approx. .5cm thickness. Using a star shaped cookie cutter, cut out 2 stars, lay 1 star onto the baking tray, and with the other star, cut a smaller star in the middle and place the outer star on top of the star on the baking tray! Stick them together with a few drops of water. Place a half a spoon of jam in the centre of the biscuit.

Bake for 10-12 minutes and cool on a wire rack.  I dust these with icing sugar for a festive look before serving (and before Cathal has them all eaten!)
