Cranberry and Date tray bake with chocolate and orange cream cheese frosting
This is such as easy cake just mix up all the ingredients pour and bake easy peasy. This recipe will make 20 slices which makes it great for party food. The cranberries are a great against the sweet dates.
Ingredients for the tray bake
150g dairy free margarine
100g caster sugar
50g dark brown sugar
3tbsp apple puree
2tbsp dairy free milk
125g gluten and wheat free plain flour
25g sorghum flour
2tsp gluten and wheat free baking powder
50g chopped dates
25g dried cranberries
50g dairy and gluten free chocolate grated
Ingredients for frosting
100g vegan cream cheese
50g dairy free margarine
200g icing sugar
15g cocoa powder
zest of 1/2 orange + 1tbsp juice
Pre-heat the oven to 180 degrees fan.
Cream the margarine and sugars together then add the puree and milk and mix well. Sieve in all the dry ingredients and mix well add the cranberries, dates and chocolate and fold them into the cake batter.
Pour this into a lined tin 25cm by 20cm and bake in the oven for 20 minutes. When its baked leave in the tin for 10 minutes then turn out on a wire rack to cool.
Make the frosting
Place all the ingredients into a large bowl and mix for about 4 minutes until nice and smooth. Spread the frosting all over the tray bake then slice it and enjoy xx
