Cougette and Chocolate Brownie with chocolate ganache…
This is a very moist brownie with a double hit of chocolate. The chocolate chips work great with the cocoa powder, it is a chocolate lovers brownie for sure!! Having the courgette in it takes away the guilt cause it makes it so much healthier…
125g dairy free margarine(I use a brand called “Pure” soya, sunflower or olive oil)
125g light soft brown sugar
2tbsp maple syrup
3tsp milled flaxseed mixed with 2tbsp water
2 pears pureed
100g courgette grated fine and the water squeezed out of it
100g gluten and wheat free plain flour(I use Doves Farm)
100g ground almonds( If you don’t want almonds just add 100g fine maize or 75g more flour)
50g cocoa powder
2tsp baking powder
1tsp xanthan gum
75g dairy free chocolate chips
For the Ganache
200g dairy free chocolate
100ml dairy free cream
2tbsp syrup (golden, agava, maple)
Pre-heat the oven to 170 degree fan.
In a large mixing bowl cream the margarine, sugar and maple syrup together till light and fluffy.
Add the flaxseed and pureed pear mix well then, add the courgette and mix again.
Sieve in the flour, almonds, cocoa powder, baking powder and xanthan gum, mix well and pour in the chocolate chips while you are mixing.
Pour this mixture into a lined tin 21cm by 21cm and bake in the oven for 35 minutes. When baked leave it in the tin for 10 minutes then, turn it out on a wire rack to cool.
When the cake is cool make the ganache, place all the ingredients into a heat proof bowl and put it over a pan of hot water, let them all melt together. Pour this over the brownies when cooled cut the brownies you should get 9 good size brownies.
