This is a great way of using up the many courgette in the garden this year. I hope you like it as much as we do I never seen Cathal drinking up soup as quick as this soup!! It can be frozen.
50g dairy free margarine
3tbsp olive oil
1 onion peeled and chopped
2 sticks of celery chopped
2 small potatoes peeled and chopped
300g courgette chopped
1ltr stock vegetable or chicken
Put a saucepan on a medium heat add the margarine, oil onion and celery cook for 3 minutes. Add the salt, cumin, turmeric and paprika cook for another 3 minutes.
Place the potatoes and the courgette into the saucepan pour in the stock bring to the boil and let is simmer for 20 minutes. Then blitz the soup with a hand blender until smooth serve with home-made allergy free bread.
